Healthy Chicken Stir Fry

I’m so happy to be posting my very first blog post today! If you haven’t yet you can check out the about page to read all about my life and what I hope to accomplish on my blog. Today I wanted to share with a go to recipe in my house, Healthy Chicken Stir Fry.

Doesn’t that look delicious! It’s such an easy recipe to make and is full of yummy flavors. I love finding meals that take under thirty minutes and that my husband can’t even tell it’s low cal.

  • 1 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 1/2 chopped onion
  • 2 diced chicken breast
  • 1 chopped zuchinni
  • 1 chopped squash
  • 1 head chopped broccoli
  • a few chopped carrots
  • 2 Tbsp. low sodium soy sauce

Note: All my recipes are usually based off measurements that serve two people so adjust your accordingly

  • Heat olive oil, garlic, and onion in a skillet for about a minute or two
  • add chicken and let cook for 2-3 minutes
  • add everything else and stir fry over medium-high heat for about 8 minutes checking to make sure chicken is cooked all the way through

It’s that simple and as you can see in the picture I like to serve mine with a side of brown rice. Doing that you get a protein, vegetable, and whole grain all in one meal! I hope you enjoy it as much as my family does.
