I’m so happy to be posting my very first blog post today! If you haven’t yet you can check out the about page to read all about my life and what I hope to accomplish on my blog. Today I wanted to share with a go to recipe in my house, Healthy Chicken Stir Fry.
Doesn’t that look delicious! It’s such an easy recipe to make and is full of yummy flavors. I love finding meals that take under thirty minutes and that my husband can’t even tell it’s low cal.
- 1 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 1/2 chopped onion
- 2 diced chicken breast
- 1 chopped zuchinni
- 1 chopped squash
- 1 head chopped broccoli
- a few chopped carrots
- 2 Tbsp. low sodium soy sauce
Note: All my recipes are usually based off measurements that serve two people so adjust your accordingly
- Heat olive oil, garlic, and onion in a skillet for about a minute or two
- add chicken and let cook for 2-3 minutes
- add everything else and stir fry over medium-high heat for about 8 minutes checking to make sure chicken is cooked all the way through
It’s that simple and as you can see in the picture I like to serve mine with a side of brown rice. Doing that you get a protein, vegetable, and whole grain all in one meal! I hope you enjoy it as much as my family does.
